Basil is a plant that can be used as traditional medicine. One part of the basil an alternative medicine leaves. leaves contain active compounds, including flavonoids, saponins, tanins, and essensial oils. These compounds able to prevent presence pathogenic bacteria accelerate food spoilage, so natural preservative. The objective study was determine ability preservative for mackerel. research carried out in vitro, by observing physical, chemical, microbiological characteristicts mackerel which were treated 8 hours soaking leaf extract. Variations concentration 0, 25, 50, 75 100%. results showed physical quality 8-hour storage samples changes fish, seen from color, eyes, gills, mucus, aroma texture. microbioloical fish analyzed total plate number method. decreased extract increased
